Welcome back to What I Ate Wednesday, the show where I share all my delicious vegan eats in a day. It was incredibly smoky so I really credit you guys with the motivation to even cook anything. Did you get caught in the smoke? How did you deal? In this episode, I pretty much ignore the outdoors and just enjoy a breakfast made with some TMRW foods breakfast patties (new to me!). Then we were interrupted by a crying cat. He's a geriatric kitty so we give him everything he asks for; today, a short walk outside. Luckily, the smoke had cleared somewhat. Albeit, temporarily. Then for dinner, I made Lemongrass Tofu out of the pressed tofu I had scored recently. It's a precious commodity as it's been constantly sold out near me. I hope you can try it but even if you can't get it, you can press your own firm or extra firm tofu and get similar results. Lastly, I did intend to include a dessert but that day, it was just so warm and since I couldn't open the windows due to smoke, I just called it a day and tried to go to bed early. Whew!
